Peanut Butter and Chocolate Pie

Serves: 8

Ingredients:

For the filling:

  • 16 oz silken tofu
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup dark chocolate chips, melted
  • 1/3 cup peanut butter
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Directions: Combine all the ingredients in the food processor or blender and blend until smooth.

Crust:

  • 1 low-fat graham crust

Directions: Bake the crust at 350F for 7-9mins. Let cool completely

Assemble: Pour the filling into the cooled crust. Cover and refrigerate until set (at least 4hrs).

Serve with a dollop of cool whip, if desired.

    • I know it sounds weird but all you can taste is the peanut butter and chocolate which is definitely my favorite combo šŸ™‚ the texture is silky almost pudding-like if you didn’t know there was tofu in it you’d never guess šŸ™‚
