Parmesan Crusted Salmon and Broccoli

This Parmesan crusted salmon and broccoli is the perfect summer dish! This recipe is one of my favorite salmon preparations. Between the beautiful golden Parmesan breadcrumbs crust on the salmon, the slight tang of lemon and the perfectly roasted broccoli, this one pan meal is about to become a regular in your home!

Dinner time is always the most chaotic time of day for us. So there is nothing more that I love than simple, easy, healthy and delicious meal with minimal clean up. Also a big bonus is if my kids love it. They can be quite hit or miss especially when it comes to seafood. But this salmon dish even they can’t resist!

So since this is a one sheet pan meal just make sure you line your sheet pan with aluminum foil, then just throw out the foil, and voila you have a clean pan! Less dishes to wash is always fine by me.

To make this recipe…

You first spread mayonnaise mixed with olive oil, lemon juice and garlic over the top of your salmon. That kind of threw me off at first because you don’t typically think of salmon and mayonnaise together. Or at least I don’t. But the mayonnaise does an incredible job at keeping the salmon moist. Then you top the salmon with a mixture of Parmesan, Italian breadcrumbs, lemon zest and olive oil. Once baked the Parmesan breadcrumbs on top give just a beautiful crunch and I think that is what makes this recipe so very special.

The preparation of the broccoli is really simple. I am a true believer that sometimes less is more. And this simple roasted broccoli goes together perfectly with the salmon. So you just drizzle the broccoli with olive oil, sprinkle some minced garlic, salt and pepper and toss it on the same baking sheet as your salmon to cook.

If you are not a big fan of broccoli you can substitute green beans or even asparagus. I would just cook those for about 10 minutes because they tend to cook a bit faster.

Equipment

Ingredients

Broccoli

  • 1 lb broccoli florets chopped into bite size pieces
  • 2 tbsp olive oil
  • 1 garlic clove minced
  • salt and pepper

Salmon

  • 4 6oz salmon fillets skinless
  • 1 1/2 tbsp mayonnaise
  • 1 1/2 tsp lemon juice (zest the lemon first)
  • 1 garlic clove minced
  • salt and pepper
  • 1/4 cup parmesan cheese grated
  • 1/4 cup italian seasoned breadcrumbs
  • 1 1/2 tsp lemon zest
  • 1/4 tsp dried thyme
  • 1 1/2 tbsp olive oil

Instructions

Broccoli

  • Preheat oven to 400F. Line a baking sheet with aluminum foil. Spray foil with non stick cooking spray.
  • Place broccoli on the baking sheet. Drizzle in olive oil and season with garlic, salt and pepper. Toss to combine.
  • Spread the broccoli along the edges of your pan leaving room in the middle for the salmon.

Salmon

  • Pat dry salmon fillets with paper towel. Season one side with salt and pepper.
  • Place salmon seasoned side down in the middle of the baking sheet.
  • In a bowl, mix together mayonnaise, lemon juice, garlic and spread on top each salmon fillet. Sprinkle some salt and pepper on top.
  • In a bowl, mix together parmesan, breadcrumbs, lemon zest and thyme. Drizzle in the olive oil and stir with a fork until moistened.
  • Spread parmesan mixture over top of the salmon fillets.
  • Bake in preheated oven for 13 mins.
  • Cook for 1-2 more mins on BROIL or until breadcrumbs are golden brown.
