This recipe for Ham and Cheese Egg Cups is a staple in my house!
They are so easy, delicious and only require a few simple ingredients you probably already have in your refrigerator!

Breakfast is one of my favorite meals, but also one of my most easily skipped meals. Mornings are typically very hectic in my house with two young kids trying to get them fed, dressed, teeth brushed, lunches packed for school, etc and it just seems that before I know it, it’s lunch time and I haven’t fed myself yet. But these egg cups are perfect way to make sure I eat a healthy breakfast and start my day off right! I usually make a whole pan, keep leftovers in the fridge and just microwave 2 for easy meal.
These egg cups are not only delicious but also low in carbs! I first made this recipe back in April when I was doing keto (ish) in preparations for a beach vacation. Pretty much the only time I put down the cookie and cut my carbs is when I’ll be going to the beach. But this recipe is a keeper and although I’m not doing keto anymore, I’ve continued to make it on a regular basis ever since! Not only do I love it, but my kids and husband also enjoy it so it’s a win-win all around!
How to make Ham and Cheese Egg Cups
Preheat your oven to 400F. Spray a 12 cup muffin pan with non-stick cooking spray. In each cup place one slice of deli ham, a sprinkle of cheddar and one cracked egg. Season with salt and pepper. Bake in preheated oven for 12-15 minutes. I bake mine for right about 12 minutes because I like my yolk a little runny.

Ingredients
- nonstick cooking spray for pan
- 12 slices deli ham
- 1 cup shredded cheddar cheese
- 12 large eggs
- salt and pepper
- slices green onions for garnish
Instructions
- Preheat oven to 400F.
- Spray the muffins tin with nonstick cooking spray.
- In each muffin cup, place one slice of ham and a sprinkle of cheddar. Crack the egg on top of cheese and season with salt and pepper.
- Bake in preheated oven for 12-15 minutes. If you prefer a runny yolk cook for only about 12 minutes.
- Let cool and garnish with green onions.

I just place two in the microwave. Microwaves vary so just watch them but should take 30-60 seconds. I heat them until they are just warm but my yolk stays runny!

These were so good! If we have a bit of leftover orange pepper, spinach, etc., we dice that and put a couple of pinches in. So versatile! Breakfast for dinner when I don’t feel like making a big meal results in eggie cups.
