These coconut milk crepes are perfect for your next brunch! The delicious crepe batter is made in the blender, then cooked in a pan until lightly browned and stuffed with Nutella making it fancy yet easy!

Being from Bulgaria crepes were essentially our pancakes growing up! I remember almost every Saturday making dozens (and dozens) of crepes with my grandmother Mara. We would fill them with jam, Nutella or feta cheese and would eat them for breakfast, lunch and dinner. They are light yet so decadent. And they are much easier to make than you might think! Especially when you make the batter in the blender.

How to make coconut milk crepes:

  • Add coconut milk, eggs, vanilla extract, granulated sugar, salt, flour and melted butter in the blender.
  • Blend until smooth about 20 seconds.
  • Spray an 8in skillet with nonstick cooking spray and heat the pan on medium heat.
  • Lift the pan away from the heat and pour 1/4 cup of crepe batter in the pan.
  • Rotate the pan from side to side in circular motion until the batter forms a thin circle.
  • Cook for about 1 minute or until the crepe is lightly golden brown then flip and cook for 1 more minute.
  • Keep warm while you make the rest of the crepes.
  • To serve spread Nutella on each crepe and fold in four.

How to freeze crepes:

Leftover crepes can be kept in the fridge for up to 3 days and reheated in the microwave. You can also freeze crepes! Just stack cooled crepes between layers of paper towels and place in a zippered freezer bag. Freeze for up to 3 months. Refrigerate overnight to thaw and then microwave to warm up.

Why use coconut milk in crepes?

Coconut milk is absolutely delicious and so nutrious! It contains antioxidants, strengthens the immune system, helps to prevent anemia and is amazing for hair and skin! I also love the taste of it and this recipe is great if you have leftover coconut milk to use up! If you don’t have coconut milk you can use regular cows milk if you prefer.

Do these crepes have a strong coconut flavor?

No, although these crepes are made with coconut milk, it is a very mild flavor. If you want a strong coconut flavor you can substitute the vanilla extract for coconut extract! Talk about delicious.

Ingredients

For Crepes:

  • 2 cups unsweetened coconut milk
  • 4 large eggs
  • 1 tsp vanilla extract or coconut extract
  • 1 1/2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 1/2 cups all purpose flour
  • 3 tbsp unsalted butter melted and cooled

To serve:

  • 1 cup Nutella
