These mini meatloaves are so delicious! This classic dish gets a new spin with the addition of bacon, cheddar cheese and BBQ sauce.

Let me be honest here, meatloaf is not my favorite thing. I often find it kind of dry, plain and maybe a little boring? But there is nothing plain or boring about these! These I can eat pretty much every day. And not only do I love them, but the whole family (and everyone that tries them) does as well! They are simple and come together in one bowl, then you just shape them into mini meatloaves and bake in the oven and dinner is ready in under 30 minutes! Winner winner meatloaf dinner.

Ingredients for BBQ Mini Meatloaves:

  • 1 lb ground beef
  • 1/3 cup chopped onion
  • 1/2 cup Italian breadcrumbs
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Worcestershire Sauce
  • 1 cup shredded cheddar cheese
  • 5 slices bacon, cooked and crumbled
  • BBQ sauce for topping

How to make mini meatloaves:

  • Preheat oven to 425F. Spray a rimmed baking sheet with cooking spray.
  • Combine all ingredients except bbq sauce in a large bowl.
  • Mix with your hands until well combined.
  • Shape meatloaves into 6 ovals and place on the prepared baking sheet.
  • Top each mini meatloaf with about a tbsp of BBQ sauce.
  • Bake for 15-20 minutes or until cooked through.

What kind of cheese to use?

I like to use shredded sharp cheddar, Colby jack or Monterey Jack cheese. You can even use pepper jack if you want some spice!

How to cook bacon?

For this recipe you need fully cooked bacon! I like to cook bacon in bulk in the oven and keep it in the fridge or freezer to have on hand. To bake your bacon preheat oven to 425F line a baking sheet with foil. Place bacon in a single layer and bake for about 13 minutes or until the bacon is crispy to your liking. I like mine very crispy! You can also cook your bacon on the stove top if you want but I prefer the oven method, no bacon splatters!

How to store leftovers

Leftover mini meatloaves can be stored in the fridge for up to 3 days.

Can you freeze meatloaf?

Yes you can freeze it! Once fully cooked place leftover meatloaves on a baking sheet and place in the freezer. Freeze for 1 hour. Then wrap in plastic wrap and place in a freezer friendly zippered bag. Thaw completely before reheating.

What to serve with meatloaf

The classic thing to serve with meatloaf is mashed potatoes and roasted green beans. Also roasted asparagus or broccoli are both great choices!
