Corn, Bacon & Cheese Chowder

  • 3 tbsp butter
  • 1/2 onion chopped
  • 1 red bell pepper chopped
  • 6 slices bacon cooked and crumbled
  • 2 cups frozen corn
  • 2 tbsp flour
  • 1.5 cups chicken broth
  • 1 cup half and half
  • 1/2 cup pepper jack cheese shredded
  • 1/2 cup monterey jack cheese
  • 2 tbsp green onions chopped


  • In a pot over medium high heat, melt butter.
  • Add diced onion and let it soften.
  • Add pepper and bacon and cook for a couple of minutes.
  • Add corn and let it cook for a minute.
  • Sprinkle flour over top and stir well to combine.
  • Stir in chicken broth and cook for a couple of minutes until it starts to thicken.
  • Stir in half and half, cover with lid, reduce heat to low and let it simmer for 15 mins.
  • Stir in cheeses and green onions and let cheese melt.
  • Taste and adjust seasoning as needed.
