Caramel Snickerdoodle Cheesecake Bars

These caramel snickerdoodle cheesecake bars are the perfect treat for fall! Combining two of my favorite desserts cheesecake and snickerdoodles into a delicious dessert!

Ingredients

For the snickerdoodle layer:

  • 1 1/8 cup all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 6 tbsp butter
  • ¼ cup brown sugar
  • ½ cup sugar
  • 1 large egg
  • ½ tsp vanilla extract

For the cinnamon sugar:

  • 1 1/2 tbsp sugar
  • 1/2 tsp cinnamon

For the cheesecake layer:

  • 8 oz cream cheese softened
  • ¼ cup sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ tsp cinnamon

To serve:

  • 3 tbso caramel sauce I used Torani brand

Instructions

  • Directions: Preheat oven to 350F. Grease or line 9×9 inch pan with parchment paper.
    To make the snickerdoodle layer:
    In a bowl mix together flour, baking soda, salt, cinnamon and nutmeg. In another bowl whisk butter, sugar and brown sugar until fluffy. Add in egg and vanilla extract and whisk to combine. Add the wet ingredients to the dry and stir to combine.
    To make the cinnamon sugar:
    In a small bowl stir together sugar and cinnamon. Set aside.
    To make cheesecake:
    In a large bowl with electric mixer, beat cream cheese until smooth and creamy. Add in egg, vanilla extract and cinnamon and beat to combine.
    To assemble:
    Spread 3/4 of snickerdoodle dough into the bottom of the pan. Sprinkle with half of the cinnamon sugar. Pour the cheesecake over top and spread with a spatula. Crumble the remaining snickerdoodle dough over cheesecake and sprinkle the last of the cinnamon sugar. Bake for 20 minutes or until edges are set but middle is slightly jiggly. Cool completely, drizzle with caramel sauce and refrigerate for at least 2hrs.
