Loaded Baked Potato Salad

This loaded baked potato salad is the perfect easy side dish to bring to your next summer BBQ.

  • 12 oz red potatoes chopped into 1 inch pieces
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 tsp garlic powder
  • 1/2 cup cheddar and monterey jack cheese shredded
  • 6 slices cooked bacon crumbled
  • 1/4 cup green onions chopped
  • salt and pepper to taste


  • In a medium pot, cover the potatoes with water and add some salt. Boil the potatoes until fork tender. Drain potatoes and place in a bowl.
  • In a small bowl, mix together sour cream, mayonnaise, garlic powder and cheese.
  • Add the sour cream mixture to the potatoes and stir to combine.
  • Stir the bacon and green onions in your potatoes.
  • Taste and add salt and pepper as needed.


This recipe can be made ahead for several hours or it can served immediately.
