BBQ Mini Meatloaves
These mini meatloaves are so delicious! This classic dish gets a new spin with the addition of bacon, cheddar cheese and BBQ sauce.
- 1 lb ground beef
- 1/3 cup chopped onion
- 1/2 cup italian breadcrumbs
- 1 large egg
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp Worcestershire Sauce
- 1 cup shredded cheddar cheese
- 5 slices bacon, cooked and crumbled
- BBQ sauce for topping
Preheat oven to 425F. Spray a rimmed baking sheet with cooking spray.
Combine all ingredients except bbq sauce in a large bowl. Mix with your hands until well combined.
Shape meatloaves into 6 ovals and place on the prepared baking sheet.
Top each mini meatloaf with about a tbsp of BBQ sauce.
Bake for 15-20 minutes or until cooked through.
Leftover mini meatloaves can be stored in the fridge for up to 3 days.
For this recipe you need fully cooked bacon! I like to cook bacon in bulk in the oven and keep it in the fridge or freezer to have on hand. To bake your bacon preheat oven to 425F line a baking sheet with foil. Place bacon in a single layer and bake for about 13 minutes or until the bacon is crispy to your liking. I like mine very crispy! You can also cook your bacon on the stove top if you want but I prefer the oven method, no bacon splatters!
I like to use shredded sharp cheddar, Colby jack or Monterey Jack cheese. You can even use pepper jack if you want some spice!
